This is a delicious twist on our classic spinach lasagne, made with a variety of roasted vegetables. Feel free to experiment, adjusting the recipes to the vegetables that you like, and are either growing in your backyard or available at your local farmer’s market. Also adjust the amount of cheese to your liking, or feel free to substitute with tofu or nutritional yeast.
